Here is another recipe I put together for a braggot using orange blossom honey. Feel free to start your own with this recipe, might be interesting to compare results on the show. Contact us if you want to start this project and we’ll put you on the show periodically for updates. I have no idea how this is going to turn out, but who knows, might be the next award winner! As a footnote, I haven’t decided if I want to add the apricot or not.

Apricot Beach Braggot

Boil Time: 60 min
Batch Size: 5.25 gallons (fermentor volume)
Boil Size: 2.5 gallons
Boil Gravity: 1.131
Efficiency: 35% (steeping grains only)

Original Gravity: 1.062
Final Gravity: 1.006
ABV (standard): 7.38%
IBU (tinseth): 29.12
SRM (morey): 9.66

3 lb – Liquid Malt Extract – Amber (33.3%)
4 lb – Honey (44.4%)
1 lb – Dry Malt Extract – Pilsen (11.1%)

1 lb – American – Caramel / Crystal 40L (11.1%)

1 oz – Chinook, Type: Pellet, AA: 13, Use: Boil for 60 min, IBU: 22.77
1 oz – Centennial, Type: Pellet, AA: 10, Use: Boil for 10 min, IBU: 6.35

4 oz – Apricot Extract, Time: 20160 min, Type: Flavor, Use: Secondary

Fermentis / Safale – American Ale Yeast US-05
Starter: No
Form: Dry
Attenuation (avg): 81%
Flocculation: Medium
Optimum Temp: 54 – 77 F

Steep grains at 155º for 30 min
Bring to boil, add LME
Add 1 oz Chinook hops for 60 min
Add DME at 15 min
Add 1 oz Centennial hops for 10 min
Cool to 100º and add 4 lbs orange blossom honey
Ferment at 65º for 12 days or until gravity reaches 1.006
*Transfer to secondary until clear, keg, carb & bottle
Condition for 14 days (bottle carb with 4-5 oz priming sugar if you don’t have a Co2 system)

*Adjunct option – 4 oz All natural Apricot extract (still haven’t decided!)
